The first time I walked into Sandbar Subs in the Zarco 66 store at 1500 23rd St. I walked through racks of chips and candy to get to the deli counter in the back of the store where a number of tasty, nutritious options were available. It was very tempting to grab some chips or candy on my way back to pick up a salad.
The next time I stopped by the setup was totally different. A display with fresh fruit, yogurt parfaits, hummus and sandwiches some made with whole grain bread were front and center. The chips and candy are still there but over to the side. It made a huge difference in the appeal of the healthier options.
The Zarco 66 store setup reminded me of a New York school district story from the May issue of Center for Science in the Public Interest newsletter The district wanted to increase the sales of fresh fruit. They contacted a professor of marketing from Cornell University for advice. Rather than dropping the price or giving the fruit away free they purchased a cheap, colorful bowl and moved the fruit from a dark corner to a bright spot in the food line. Sales of fresh fruit increased by 104%.

How fabulous! My office is just down the street. I will have to check out the healthy option next time I am hungry.
