Pico Enchiladas are the second dish in the photo. The enchiladas are stuffed with broiled chicken, spinach, mushrooms, fat free sour cream and topped with Pico de Gallo and fat free sour cream. Two enchiladas with rice come in at 510 calories, 4 grams of fat and 5 grams of fiber. If one enchilada with rice is enough you drop the calories to 350 and the fat to 2 grams.
If something on the main menu catches your eye substitute black beans for refried beans. The black beans are prepared without fat. The Mexican rice has a small amount of fat added when the rice is browned. If your children are ordering off the Kid's menu you can now get 1% milk with their meal.
When you look at Carlos O'Kelly's Lighten Up menu items you notice the extra vegetables thrown in to make the dish satisfying. Researchers at Penn State have shown that calories can be reduced by up to 30% without subjects noticing by adding fruits and vegetables to dishes. So whether you are eating at home or out load up on fruits and vegetables.

Looking at these dishes is making me hungry! It is good to know that you can subsititute black beans for refried.

I LOVE Carlos O'Kelly's! And now I have more reason! BTW Trish, I'm tweeting the "Researchers at Penn State have shown that calories can be reduced by up to 30% without subjects noticing by adding fruits and vegetables to dishes. So whether you are eating at home or out load up on fruits and vegetables." sentence! Hope you don't mind! Good info!
